JoshFox Bread began in 2015 as a creation of Josh Berger. He came to bread baking after extensive training in pastries at the French Culinary Institute in New York City. After spending time working at several local bakeries, he was ready to make breads that were not generally available in Arcata. These breads are often baked to a dark mahogany color bringing out the rich toasted qualities of the grain. The loaves often use a sourdough culture instead of commercial yeast for leavening and are held at a cool temperature before baking to bring out the most flavor. All whole grains milled in house.
